I create menus entirely oriented towards the absolute elimination of waste.

A cuisine that focuses not only on the success of a technically and chromatically perfect dish, but above all the idea of a dish that is good for us and does not impact on nature while we make it.

It is not simply a question of cooking, we must follow the season, respecting the food and the guest.

I create gourmet dishes by recovering the scraps that we would throw in the wet bag: a waste equal to zero.

When I think about what I will cook, I also always think about how to do it and how I will eliminate waste, reusing the leftovers for new recipes.

This is where the creativity, the challenge and the great beauty of my work come into play.
