“DONO DORATO” a traditional short pasta format and agri-food product of Molise origin and subsequently spread in Puglia and other southern regions. The peculiarity of this type of pasta, with an elongated and concave shape very similar to that of Sardinian gnocchetti and made with a simple dough of durum wheat semolina and water, lies in the processing that makes it particularly consistent on the palate and difficult to unravel and break during cooking.
